Tomato Omelet (Pudla)

Growing up my mom had to get creative to make me breakfast because I hated eggs. Turns out I am allergic anyways so now more than ever Pudlas are my go to for savory breakfasts. Its made with besan (gram flour - similar to chickpea but slightly different) which is a good source of protein and is filling. I am such a desi girl at heart and love my indian foods. I can’t quite remember if this was mom’s recipe or dad’s but we have it all the time. Essentially its like a crepe/pancake.

Seems redundant to have tomato based pudlas with a ketchup/tomato based sauce but trust me its so good!! You can add what ever other veggies you feel like to change it up too. My favorite part is getting the bursts of green chilli and onion because of the chunky batter.

I’ve recently started experimenting making pudlas with moong flour to get a little more protein and nutrition. I will update this post once I’ve worked out the right ratio!
